I know I promised my salsa and queso recipes this week, but that can wait until next week. This weekend was my sister-in-law's baby shower. My mother-in-law and I hosted it, and it was a really fun event. Among other things, one of my duties was to make finger sandwiches. Knowing I was dealing with a largely vegetarian group, I tried to keep anything animal related to a minimum. The sandwiches I came up with were this, this, and this. They were largely successful (especially the cucumber variety), with the exception (in my opinion)of needing to use a more moist and fluffy bread for the pumpernickel and whole wheat selections. I'll get 'em next time.
