I Love Cheesy Potatoes

The arrival of autumn means it is time to whip out more comfort food recipes.  Au Gratin Potatoes (lovingly called rotten potatoes in my house) is by far, one of my favorite side dishes.  We have been tweaking this recipe for a few years now, and have found that you can use different kinds of cheese, depending on your mood.  We used cheddar and provolone in this version pictured below.

It is important to use cream in this recipe and not try to substitute with a lower fat milk.  In our trials, we found that it becomes watery instead of creamy.  Not good.  Allow extra time for this to cook all the way through.  We have noticed that it usually takes closer to two hours.  Also, feel free to experiment with different seasonings.  We have added thyme and/or chives in the past to mix the flavor up a bit.  Enjoy!

Cheesy potatoes are the best! But you know what this reminds me of? Have you ever seen a show on TLC called My Strange Addiction? I've only seen it once or twice but I just happened to watch an episode featuring a woman addicted to cheesy potatoes! I wish I were making this up but it's true. The woman absolutely refused to eat any other food but cheesy potatoes. She consumed something like 600 pounds of potatoes every year!!! So consider yourself warned - cheesy potatoes are apparently as addictive as crack.

Have you ever seen the show Freaky Eaters? Well there was this one woman who would eat nothing but cheesy potatoes. She had eaten only cheesy potatoes for years. Every time I see cheesy potatoes thats what I think of even though they are delicious.
