This is a recipe that I have been making every fall and winter for the past few years. I cook up a big batch on Sundays, and husband and I take it for lunch for a few days. It is easy to reheat in the microwave, and freezes really well for eating at a later time. If you are a vegetarian, you could easily omit the beef and add some vegetable stock to the mixture (for flavor). Over time, I have added and changed contents to suit ingredients I had on hand or sometimes veggies I was growing in my garden. Although the recipe only calls for half an onion, I use a whole onion and also add a shallot and a few cloves of garlic. In the version pictured below, I switched out the cabbage for Swiss chard and added some white beans to make it a bit heartier. The celery, spinach, and cabbage in this recipe are packed with fiber (bonus), plus the soup tastes great. I'd love to hear back from you if you make this. Enjoy!
