One of the cuisines that my husband and I love to death is Mexican food. His roommates would even make fun of us for going having Mexican food every Saturday for lunch.
Sometimes you are craving chips and salsa or quesadillas and it's too late to go to the store...
that's when this recipe comes in handy!
It's a lot easier than you think!
Ingredients:
- 4 cups of all-purpose flour
- 1 tsp salt
- 2 tsp baking powder
- 2 tbsp shortening
- 1 1/2 cups of warm water
- 2 tbsp oil
- coarse salt for seasoning chips.
Preparation:
-Whisk together flour, salt and baking powder until mixed well. Use your hands to combine shortening until you reach cornmeal consistency. Add water slowly in the flour mixture. Mix the dough until it all comes together.
- Place the dough on a floured surface and knead it for a few minutes. Divide the dough into 24 pieces and place them into a spare plate and cover with a dampened towel.
- Heat a skillet to medium high heat.
- On a floured surface, take each dough ball and flatten them out with a floured rolling pin. They should get really thin! Transfer to skillet and cook until slightly browned. Cook both sides for about 45 sec.
- Preheat oven to 350 F.
- Slightly brush oil on every tortilla. When you have about 10, stack them and cut through tortillas with 4 cuts to make 8 even chips.
- On a large cooking sheet, arrange chips in a single layer. Season with coarse salt. Bake for about 11 minutes or until they browned on edges.
- Serve and enjoy! :)
