My friend Anne emailed me this recipe sometime in December. I thought it was a great twist on traditional Rice Krispies Treats, plus it was a nice change from the pumpkin pies and chocolate truffles that are always around during the holidays. I added a little more of the spices than the recipe called for, which did give the treats a nice pumpkin spice flavor. Aside from that, I followed the directions exactly and it turned out really well. They are also nice for gifting (I put them in a pretty box along with my fudge from last week). Enjoy, and let me know if you do make these.

Ingredients:
· unsalted butter 2TB, 28 grams
· pumpkin puree 1/4 cup, 616 grams
· mini marshmallows 1 (10oz bag) plus 1 cup, 333 grams
· vanilla extract 1/4 tsp, 1 gram
· ground cinnamon 1/4 tsp, 1 gram
· allspice - a pinch
· nutmeg - a pinch, freshly grated
· salt - a pinch Publish Post
· rice krispie cereal 6 cups, 168 grams
makes 48 treats. we made them small, approximately 1.5" square.
Preparation:
Butter a 9" x 13" baking dish*.
In a heavy saucepan or Dutch oven, melt butter over medium-low heat. Add the pumpkin puree and continue to cook until it is warmed through. Fold in 10 ounces of marshmallows, stirring frequently until almost completely melted. Stir in vanilla, cinnamon, allspice, nutmeg, and salt -remove from heat.
Allow the marshmallow mixture to cool for 10 minutes; fold in the remaining cup of marshmallows. Continue to cool the mixture for another 20-25 minutes until it is room temperature (it's important to do this, otherwise the treats will turn out soggy). Add the cereal and stir, using a rubber spatula, until combined.
Press the mixture into the greased baking dish. Let set for 30 minutes before cutting and serving.
*if you use a smaller baking dish, say 8"x11", the treats will simply be taller. go for it if you like them that way.
