Chocolate Pots de Creme

Revisiting my trip the the Cliff House yesterday had me yearning for their wonderful pot de creme.  Naturally, I had to try to recreate this delicious dessert at home.  I went to my trusty Better Homes and Gardens cookbook and found a very basic version, which I was able to whip up quickly (but it still needed to set for 4 to 24 hours before eating).  If you don't have this cookbook I can't recommend it highly enough, especially if you are new to cooking.  The recipes are all very easy to follow, which is a real confidence builder.

easy peasy Ingredients:2c whipping cream6 ounces semisweet chocolate. coarsely chopped1/3 c sugar4 beaten egg yolks1 tsp vanilla                                                                                                      
How To:
In a heavy small saucepan combine the whipping cream, chocolate, and sugar. Cook and stir over medium heat about 10 minutes or until mixture reaches a full boil and thickens. 



Gradually stir all of the hot mixture into the beaten egg yolks. 


Stir in vanilla.


 Pour chocolate mixture into 4 or 6 pots de creme cups or small dessert dishes. Cover and chill for 4 to 24 hours.

Woah -- I need to make this! I've never had pots de creme. How is the consistency? I imagine it would be like a pudding.
