Roasted Green Chile Chicken Enchiladas

I really love Mexican food.  Husband and I could probably eat it every day of the week.  So, Sunday night we decided to try our hand at making enchiladas.  We found this recipe by Tyler Florence (one of my favorite Food Network chefs) and decided it was a keeper (it also got great reviews on the website).  As recommended, we used store bought rotisserie chicken, which was very convenient.  There was enough left over, at the end of the meal, to freeze several batches for future dinners.  Instant easy dinner night (and it doesn't even involve a bowl of cereal).  Score!

You can easily shred chicken with two forks.  Just stab the fork into the chicken, and pull in opposite direction with each fork.




My advice when making the verde sauce is to add one lime at a time.  The flavor is strong, and you may want to use less.


Ta-da!  We added a little of our homemade hot salsa on top.  It gave the dish just the perfect kick.  I would love to hear from you if you make this.  Enjoy!


One last thing.  Husband and are not not fans of the ole' avocado, so we did not try the guacamole recipe included on the page.  Yeah, I know not liking avocados is kinda weird.  Maybe that is what makes us soulmates?
