Have You Tried Kale Yet?


Kale has kind of been the "it" vegetable as of late.  I feel like I am always hearing about it in the media, and had never tried it until recently.  I found a Kale Chip recipe in Gwyneth Paltrow's My Father's Daughter cookbook, and decided it was too simple not to try.  Plus, she compared them to potato chips when she was describing them, and I am a sucker for chips.


Ingredients:

1 big bunch kale, stems discarded and leaves torn into roughly 1 1/2" pieces

2 tbsp extra virgin olive oil (I would use less next time)

coarse salt (I used sea salt)


Preheat the over to 400 degrees F


Toss the kale with the olive oil and spread out on two baking sheets.


Sprinkle with coarse salt and roast for 12-15 minutes, or until lightly browned and crispy.  Eat like potato chips (and trust me, once you pop, you can't stop).


I am going to be honest here.  I polished off the entire batch of kale chips myself (which was made from the entire bunch in my second picture).  They were, in fact, like healthy potato chips, and I didn't feel guilty about eating them at all.  Did I mention that kale (and green leafy vegetables in general) is a superfood?

I'll have to give kale chips a try. I really enjoy mixing smushed avocado, lemon juice, and kale all together. It's so yum to me. Plus, I saw they make a similar salad on the salad bar at Whole Foods!

i love kale - my favorite restaurant here has added a new kale recipe to their menu and it's the most amazing salad ever. such a big craving of mine.

I have that cookbook too, Erin, and have done this several times. Kale chips are the best, and the most awesome thing is that the kids love them too:)

I Love kale chips. Molly has kale every night for dinner so sometimes I steal some of hers and make us some chips! :)

Kale chips are my FAVORITE. People think I'm crazy for raving about kale and then they try it and YUM. So good.

I haven't tried kale chips yet, but I've been meaning to. I really want to make some sea salt and vinegar ones. Yum!

Um...yes please! I eat kale chips all the time. They're hopelessly addictive. I like to make a batch to bring with me to work, just to snack throughout the day. But I always end up polishing half of it, as soon as it's out of the oven.
