Breakfast for dinner is one of my favorite things. Usually, it means that husband and I are both exhausted, and scrambled eggs and toast sound quick, easy, and comforting. However, every once in a while we decide to complicate it a little. We had been trying to find a way to turn home fries into suitable side dish for dinner. We caught an episode of Brunch @ Bobby's on The Cooking Channel and discovered this recipe for Cheesy Hash Browns, that was just perfection.
There are only a few ingredients, which make it easy to whip up on a weeknight. You should be able to find a fantastic Irish Cheddar at your local grocery store (which is where we found ours). This will definitely be something we make again.

Breakfast is one of my favorite dinner options too. I usually end up making a veggie hash with whatever is in my produce drawer and scrambling or frying some eggs to go with it. Plus, cheese is always a must. Yum!
