St. Patrick's Day Dinner


I admit it, I am tired of the same old corned beef and cabbage.  Yeah, it is easy to put into a crock pot, but this time St. Paddy's Day fell on a Saturday.  We actually had time to cook.  Also, Husband and I pride ourselves on both being 1/4 Irish (we always conclude our toasts with Sláinte, if that counts).  It is the only shared heritage we have.  So naturally, we went with lamb.  (If you are Irish and cringing right now, please know that we really gave it our all).


I started googling St. Patrick's Day recipes, and I came across this recipe.  Yes, it was a bit more Southern than Irish, but it sounded amazing, and isn't that the important part?


The flavor was incredible.   If you love garlic,rosemary, and lemon, this is definitely a recipe for you.  

 


Medium rare is exactly the way we like it.

Even with all the irish in my hubby we had mexican on St. Patrick's Day. This looks good!
