I bookmarked this recipe on Pinterest a few months ago. In an effort to actually do something with all of the lovely images I collect, I decided to give it a try. We tweaked it a bit, and the result was pretty tasty.
We received a Cuisinart Griddler for Christmas, and cherish any chance we get to whip out the panini press. The original recipe calls for more of a grilled cheese style sandwich. This could be made just as easily in a skillet, but you will need to weigh the baguette down (the recommended method is to use a brick wrapped in tin foil).
Ingredients:
Sweet yellow onion
Olive oil
Roast beef
French baguette
Butter (or spread of your choice)
American cheese
Provolone cheese
Au Jus (store bought)
How To:
1) Heat up your panini press on high. This takes about 10 minutes.
2) In the meantime, peel your onion and cut in half. Slice into small sections (to your liking).
3) Heat up two tablespoons of olive oil in a skillet over medium heat (you can also use butter). Once hot, add onions and caramelize. The onions will soften and char on the sides. Remove onions from heat.
4) Cut baguette to size of sandwich you desire (mine was about 5"). Butter the outside of the top and bottom piece. This is important when using the panini press.
5) Add cheese, caramelized onions and roast beef to the inside of bread to make your sandwich.
6) Grill in panini press for 5 to 10 minutes (our was ready in 7), depending on how crusty you like your sandwich.
7) While you are waiting for your sandwich to heat up, make store bought au jus for dipping. This is not a requirement, but recommended if you enjoy French dip.
8) Remove from press and devour, dipping in au jus as needed.
8.1) Don't forget to turn off your Griddler. This is a very important step.
