We finally got around to harvesting the rest of our potatoes. This is our pile of Yukon Golds. There is only one thing you can do with a stack of potatoes like this (aside from washing them off). Exactly! Make some home fries for breakfast. Here is how (this is our recipe). This recipe is geared to your taste. Husband and I like very flavorful food, so we tend to use more rather then less.
I am going to assume you probably didn't grow the potatoes in your garden. No judgement here. In my case, I washed and peeled the potatoes. You will probably do the same with your store bought potatoes (minus all the dirt). I am going to be honest, I can't notice the difference (between store bought and home-grown). Shhhh...don't tell husband.
Ingredients:
Potatoes (Yukon Gold work well, but you can use red or white, but probably not russet)
Onions
Shallots
Garlic
Green Pepper
A hot pepper of some sort (we used an Inferno Pepper we grew in our garden, but this step is totally up to you and you taste buds)
Cumin
Paprika (a lot, to make it have a reddish tint)
Curry Powder (a happy accident)
Onion Powder
Garlic Powder
White Pepper
Sea Salt
First of all, you want to peel and dice your potatoes (into home fry size pieces). Think of how you usually order them in a restaurant.
This next step is up to you. I am going to tell you my recommendation, and then you can proceed as you like. Heat up some bacon grease (after you have made bacon) and fry the diced potatoes in them. It is the best way. If you are trying to be healthy (or vegetarian, I totally respect (and envy) that) use olive oil or canola oil. Also add a little Kosher salt. Any way you choose, make sure the oil is very hot. (to the point of smoking). When you dump a bunch of cold potatoes into hot oil, the oil cools down fast. Also, stand back. You don't want any spatters to hit you.
Let your potatoes brown on one side. Then put in the onions, green peppers, and hot peppers (if desired) and flip over and brown the other side. Throw in all the seasonings and leave in until very brown. It will look like this.
I mix it around a bit after that. Personally, I like my potatoes to be almost black (see below). You will know the home fries are ready when the potatoes are soft (a fork will go right through them). Serve with breakfast (in my case, toast, eggs, and bacon). Especially good for breakfast-as-dinner (one of my favorites). Enjoy!

This looks amazing!! My parents grow their own potatoes so it's pretty sweet. I don't think I notice a difference in flavor either.
